My grandma Wanda used to make us this recipe every Christmas and I love them. I’m not going to pretend that they are in any way healthy. But they are definitely delicious. I hope you enjoy them ❤️
Dough:
1 Cup butter. (room temperature)
8 Ounces cream cheese. (room temperature)
2 Cups flour.
Filling:
1 Egg.
3/4 Cups packed brown sugar.
2 Tbs melted butter.
1/2 Tsp vanilla extract.
Dash of salt.
Chopped pecans (around 1/2 cup but add more or less based on personal preference)
Directions:
Mix butter and cream cheese until smooth.
Slowly mix in the flour, using your hands to fully incorporate.
Press about 1-2 tbs of the dough into each mini muffin pan compartment. Making sure to cover the bottom and sides. It should look like a mini pie. Repeat until pan is full.
Add chopped pecans to center of each compartment.
To make the filling mix together all ingredients.
Add filling until pecans are barely covered.
Bake at 350 for 15-17 minutes until filling is set.
Reduce heat to 250 and bake 10 minutes.
